What's your favorite flavor of ice cream? I've always thought that your favorite flavor said a lot about you. I have no evidence whatsoever if that's true. But, to me, if you like pistachio ice cream that means you fancy, huh? And a peanut butter chocolate? Girl, we're BFFs. Come over now. And don't get me started on vanilla. Unless it's made from scratch and real vanilla beans. I guess I'm fancy, huh?
It's not summer without scoops and scoops of ice cream. I'm one of those people that always keep ice cream in the house. I'm not ashamed of it at all.
And it's not uncommon for me to have ice cream before dinner. Nope. Just did that on Monday. But, it was a holiday so does it really count? I'm going with a no. Especially because it was a scoop of this recipe.
Obviously, times are quite different now with needing to be fully dairy & sugar-free among other things. But I'm not letting that stop me these warm summer days. Not happening! I love ice cream way too much. And when Memorial Day weekend was creeping up I was starting to feel a little down about not being able to have any sweet treats.
But then this beautiful peachy thing came to me and I was like a giddy school girl. I get like that sometimes when a recipe or meal really excites me. I may even do my happy dance. I told you I'd show you one day, I promise I will.
How do you feel about peach ice cream? Don't shoot me. I'd never had it before I made this recipe. I know, I know. But, it's true.
What have I been waiting for?! Oh my, it is so delicious. Especially this recipe. It's fruity mixed with a creamy consistency. The coconut milk gives it a silky texture and honestly any more sugar and we'd be over doing it, friends.
Whether you need to be sugar-free for medical reasons or you're just looking for a sweet treat with a little less sugar, I urge you to make this. Here's why:

Throw a few peaches on the grill, get them all warm, caramelized and juicy & put this ice cream over top. Yes, do itttt! You won't be sorry, you'll be thanking me.
Easy Sugar-Free, Dairy-Free No Churn Peach Ice Cream
- 1 bag of frozen peaches
- 1 can of coconut milk
- Put both ingredients in the blender and blend until smooth*
- Pour into a 4x6 inch tin
- Wrap in plastic wrap making sure it lays directly on the ice cream
- Freeze for a minimum of 8-12 hours
- Take out 10-15 minutes to loosen for serving
*Depending on desired consistency, may want to use less milk if wanting super thick ice cream. This came out (once thawed a bit) like a froyo.
