Summer is finally coming. It's Memorial Day weekend which means it's basically Summer. So let's just call it what it is. Or, at least what we want it to be. That's how visualization works, right? I thought so.
Anyways. With Summer comes holidays, barbecues, bonfires (my favorite!), day parties (I hear the kids are calling these "darties" now. Stahp!), small town parades and beach hangouts. I could keep listing festivities but I know you catch my drift.
While Summer is not one of my favorite seasons, it does include some of my favorite past times. I'm more of a Spring and Fall kind of girl. I love the mix of hot and cool, sunny and rainy & all the colors in nature got me like whoa! But, I've never been a girl to pass up a cookout. To this day, one of my favorite meals are burgers on the grill, macaroni salad, and all the deviled eggs. And I mean all, literally. As in, my mom makes me a separate 1/2 dozen that no one can touch.
But, this year's summer festivities will be a little different due to my candida. Honestly, when my doctor told me I'd be doing this for 12+ weeks, Memorial day BBQs and Fourth of July darties, no, day parties, flew through my mind. What will I eat?! Will I have to skip them altogether?
I was determined to not feel left out and to still enjoy some of my favorite foods during the summer months. So, I began researching some remixes of my old favorites. I'm sharing two of my favorite candida-friendly summertime recipes with you today. Whether you have candida or are just looking for gluten-free, dairy-free & sugar-free recipes, you'll love them all the same. I sure did!
1. Cauliflower "Potato" Salad
You can't say cookout without potato salad. I mean, you can, but, you know what I mean! And right now, potatoes are out for me. So I took our family potato salad recipe and subbed cauliflower for the potatoes. Girl, bye. SO GOOD. You don't even miss the potatoes and the flavors are out of this world.
- 1 medium cauliflower
- 1c. mayo (check your labels)
- 1-2 boiled eggs
- 2tbsp yellow mustard
- 2tsp celery seed
- 1-3 celery stalks
- salt & pepper
- optional: paprika
- De-stem, remove the core & cut up the cauliflower into bite-sized pieces
- Steam the cauliflower for 7-8 minutes overtop a large pan of boiling water
- Once fork tender, place in a colander and run cold water over it to bring to room temperature
- Mix other ingredients together in a bowl except for the egg & paprika
- Place the cauliflower in the mixture and toss until fully coated
- Slice boiled eggs and place over top
- Sprinkle paprika if desired
*Best to do this 2-3 hours before eating to let the cauliflower marinate in the flavors.

2. Berry Berry Mocktail
It ain't a party unless there's a drink in your hand! And hey, it can even be non-alcoholic. That's how I'm doing it these days. No matter your reason for going sans alcohol, don't let it get you down. There are so many fun & fruity drinks you can make that don't need any liquor or beer. And just think, you won't have to nurse a hangover in the morning! I did the Berry Berry Mocktail this weekend and loved it!
- 4-5 small strawberries (sliced into fours & stems cut off)
- 1/4c. blueberries
- 8oz cranberry lime sparkling water
- lime wedge
- Mull the berries together in a cocktail shaker or mason jar until mostly smashed with a few pieces left for decoration.
- Squeeze the lime over the berries & stir
- Pour sparkling water over berry mixture & stir
- Add ice & lime wedge for a last squeeze
*if you're consuming sugar, feel free to add a bit of simple syrup (equal parts water to sugar (ex. 1c. water & 1c. sugar) and boil until sugar dissolves)
